  • 8 tablespoons unsalted butter or virgin coconut oil
  • 2/3 cup milk (dairy or non-dairy)
  • 2 cups granulated sugar
  • 1/8 teaspoon kosher salt
  • 4 ounces unsweetened chocolate, chopped

Instructions
  1. Line a large baking sheet with parchment paper and set aside.
  2. In a large mixing bowl, combine the oats and cocoa powder until evenly distributed.
  3. In a medium saucepan, combine the butter, sugar, milk, and salt. Heat and whisk frequently until boiling for 2 minutes.
  4. Remove from heat and add the chopped chocolate, stirring until completely melted.
  5. Let the chocolate mixture cool for about 2 minutes before mixing with oats to prevent cooking them.
  6. Create a well in the center of the oat mixture and pour in the chocolate mixture. Stir to combine until thick but soft.
  7. Using a scoop, portion the mixture onto the prepared baking sheet, flattening each mound slightly.
  8. Allow cookies to set at room temperature or refrigerate for about 30 minutes or until firm.
